Winemaking
Hand harvest. Selection on the sorting table, berry by berry, ensuring full control over grape quality. Fermentation then takes place at moderate temperatures between 25 and 27ºC, avoiding over-maceration in order to extract the primary red-fruit aromas of Mantonegro and the smooth, rounded tannins of Cabernet, Syrah and Merlot. Subsequent ageing in second- and third-year barrels for 12 months.
Tasting notes
Color: Bright picota cherry red with violet reflections.
Nose: Aromas of wild berries. Notes of licorice and balsamic hints.
Palate: Powerful, balanced and warm, with smooth, rounded tannins.
