Description
Winemaking
100% Chardonnay. Once the grapes are pressed, the must undergoes alcoholic fermentation in stainless steel tanks for 10 days at a controlled temperature not exceeding 16 °C. After fermentation, the wine is aged on fine lees in French oak barrels from the renowned Allier cooperage for 9 months, with occasional bâtonnages to ensure the fusion of the lees’ aromas with the wine and create a full-bodied mouthfeel. This oak aging is followed by an additional 5 months of bottle aging.
Tasting notes
Color: Clear and bright, straw-yellow with greenish reflections.
Nose: Fruity aromas, including tropical fruits. Notes of mango, green apple, pear, pineapple, kiwi, and citrus. Secondary aromas of butter, caramel, butterscotch, and even hints of cream.
Palate: Rich and full-bodied, well-balanced on the palate, rounded by its good acidity, with a smooth and pleasant structure.
Food pairing
Pairs well with any type of appetizer, elaborate salads, roasted white fish, fish in sauce, soft cow’s cheeses (Brie and Camembert), nuts, poultry, seafood, and even desserts.
