Description
Winemaking
85% old-vine Tempranillo, 15% Merlot. Land on a plateau over 900 m in altitude in Piñel de Arriba, Valladolid. The grape selection is carried out in the vineyard and then again at the sorting table. Stems are removed without crushing the grapes. Long, low-temperature macerations take place in oak vats with a submerged cap. The must is naturally pumped over, using gravity to achieve optimal polyphenol extraction. Malolactic fermentation occurs in French oak barrels. This wine is bottled unfiltered. It is aged for a total of 12 months in American and French oak.
