Winemaking
100% organic Verdejo from old vines, sourced from plot number 40 (organic farming), located in the upper, rocky area of the village of La Seca. The must undergoes cold maceration with the skins for 8 hours at 7 °C, enhancing the characteristic aromas of Verdejo. Fermentation takes place at a temperature between 14 and 16 °C, helping to preserve and intensify the unique flavor of this variety. After fermentation, the wine remains in contact with fine lees in stainless steel tanks, which reinforces its structure and adds fatty acids, giving a broader, more glyceric mouthfeel. The wine is stirred using bâtonnage every 7 days.
The grapes used for this wine come from vineyards near the villages of Serrada and Rueda, in the heart of this white wine region, an area widely regarded as the finest within the Rueda denomination. From the 80 hectares, we have selected some of the best vineyards and grapes grown on poor, rocky, and well-drained soils.
Tasting notes
Color: Bright straw-yellow color.
Nose: Fresh, delicate, and aromatic on the nose, with notes of tropical fruits followed by melon and mineral and floral nuances.
Palate: Impeccable acidity, depth, and volume, leading to a long and pleasant finish.
Food pairing
Fish and seafood dishes, with or without sauce, rice dishes, and pasta.
