Winemaking
The grape selection begins in the vineyard, choosing the best plots in the region. Harvesting is carried out at night to avoid high temperatures and premature fermentation. The base wine is then fermented and undergoes a dealcoholization process using a column of rotating cones, which separates the wine into its different components, removing the alcohol in the most gentle way possible while preserving its aromas and mouthfeel. During this process, up to 30% of the original liquid can be lost.
Tasting notes
Color: Pale yellow with greenish hues. Good release of fine, persistent bubbles that rise slowly.
Nose: Good intensity with clean aromas of ripe red fruits.
Palate: Fresh, fruity, and pleasant, with good structure and medium intensity.
Food pairing
This 0.0% sparkling wine is perfect as an aperitif. It also pairs well with many types of Spanish tapas, salads, risotto, cheese (especially sheep’s cheese), as well as light fish and seafood dishes.
