The result of a long and careful research project, Emina Verdejo is the winery’s first wine to be fermented with a native yeast, sourced directly from its own vineyards. This fermentation process produces a wine with enhanced organoleptic properties and elegant notes of fresh tropical fruits, such as pineapple and passion fruit.

For the fermentation of Emina Verdejo, a yeast named “Saccharomyces Cerevisiae EMINA,” derived from our own vineyards, was used.

Las Marcas is one of our most important estates, located in Villalba de Adaja, Valladolid. This estate is divided into several plots, the largest of which is planted with Verdejo vines on trellises. The vineyard has a planting density of 5,000 vines per hectare and is situated on the banks of the Adaja River.

This exceptional wine is crafted in contact with fine lees, a method that allows for a slow and distinctive evolution, imparting style, character, and balance to the wine.

Tasting notes

Color: The wine shows a pale straw-yellow color with a greenish hue, clean and very bright.
Nose: Aromas of strawberry, stone fruits, and fresh pineapple, with hints of fennel and grapefruit in the background.
Palate: On the palate, the wine is structured, with excellent length and a balance between the fresh acidity and the elegant bitterness of the Verdejo variety, alongside intense flavors of apricot, soft tropical notes, and lively citrus.

Food pairing

To pair Emina Verdejo, we suggest a dinner with friends and some assorted pokes. In general, Emina Verdejo pairs well with pokes made from fatty fish, such as salmon or tuna. The fruity and citrus flavors of the wine complement the flavors of the fish and the vegetables.

Salmon poke: Salmon is a fatty fish with a delicate flavor. Emina Verdejo will enhance the flavors of the salmon and give it a fresh touch.

Octopus poke: Octopus is a versatile ingredient that can be prepared in many ways. This Verdejo pairs well with grilled or baked octopus pokes.

Shrimp poke: Shrimp is a light and fresh ingredient, ideal for this type of wine.
