Cold pre-fermentation maceration of the grapes for two days. Fermentation with indigenous yeasts in open tanks with temperature control.
Subsequent maceration for 5 days, with immediate malol
Tasting Notes
Color: Very intense, bright cherry-red
Nose: Intense aromas of black fruit (blackberry, plum, blueberry) with spicy notes and a light toast from the oak. Hints of India ink and touches of peat
Palate: Powerful volume and persistence. Fruity, with smooth tannins well integrated with a fresh acidity. Sweet notes from the oak and reminders of charcoal and ink. Strongly marked by minerality
