Winemaking
The first careful selection of the grapes takes place in the vineyard. Upon arrival at the winery, the grapes undergo a second manual selection on a sorting table before being cold-macerated at 5 ºC for 24 hours. The grapes are then destemmed, crushed, and fermented at a controlled temperature of 25–28 ºC in small French oak barrels, followed by an extended maceration. Malolactic fermentation occurs naturally in new 225-liter French oak barrels, after which the wine continues aging for 14 months. The wine then rests for an additional 18 months in the bottle.
Tasting notes
Color: Dark red with a bluish tint.
Nose: Complex, deeply intense, with strong fruity notes (blueberry, blackcurrant), cocoa, and abundant mineral hints.
Palate: Excellent structure. Ripe, well-integrated tannins, firm yet silky, with a smooth mouthfeel and an earthy, pleasantly spicy finish.
Food pairing
Pairs well with cheeses such as smoked Idiazabal, Roquefort, and aged Manchego, as well as all kinds of stews and a wide variety of meat dishes.
