Description
Winemaking
Pre-fermentation maceration at a controlled temperature for 72 hours at 10ºC.
Fermentation and maceration for 21 days with frequent pump-overs and aeration.
Tasting notes
Intense cherry-red colour. On the nose, red fruit dominates over a spicy background of liquorice. Persistent on the palate, with red fruit and spicy notes reappearing.
