Winemaking
Made with grapes from a single vineyard over 70 years old, planted with 95% Tempranillo, Graciano, and Garnacha.
A few days before harvest, each vine is carefully selected, removing damaged and under-ripe clusters so that only the best grapes remain. Due to the age of the vines and this meticulous selection, the annual yield does not exceed 3,000 kg/ha.
Cold pre-fermentation maceration, followed by fermentation at controlled temperature and extended post-fermentation maceration to extract tannins and colour. Aged for 26 months in new Allier and Vosges oak barrels from the most prestigious French cooperages.
Tasting notes
Colour: Attractive deep cherry, with little evolution.
Nose: Without swirling, notes of black fruits such as blackberries, blueberries, cassis, and even nutmeg. Swirling the glass reveals hints of graphite, ink, cocoa, as well as dried fruits and subtle dairy notes.
Palate: The attack is fleshy with clean, well-integrated ripe tannins. On the palate, mineral tones, forest fruits, and fresh sensations reappear. The finish is long, fresh, and persistent, supported by the tannins. It will gain intensity and complexity with further bottle aging.
